Ingredients

  • 1 1/2 cups rolled oats
  • 3/4 cup whole wheat flour
  • 1/3 cup coconut oil, melted
  • 1/2 cup maple syrup or honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup raisins or chopped nuts


Instructions

  1. Preheat oven to 350°F and line baking sheet with parchment.
  2. In a bowl, combine oats, flour, cinnamon, baking soda, and salt.
  3. In another bowl, whisk coconut oil, maple syrup or honey, egg, and vanilla.
  4. Mix wet ingredients into dry until combined. Fold in raisins or nuts.
  5. Scoop dough onto baking sheet in mounds.
  6. Bake 10–12 minutes until edges are golden.
  7. Cool on sheet, then transfer to rack to finish cooling.

Notes

  • Add coconut or dark chocolate chips for variety.
  • Chill dough for chewier cookies.
  • Swap raisins for cranberries if desired.
  • Store in airtight container or freeze.
